Christmas Mince Pies

It has been a long time since I posted, I apologize, no real excuse except life did get in the way!!! Now I have semi-retired there will be more posting from myself and my friend. 
I decided to make mini Christmas tarts,had lots of events to attend , the mini silicone trays sat on the bench ready to be filled. On with the mixture that had been sitting in the fridge marinating for a week , out came the homemade pastry from the fridge. I was ready to go. I was on fire, making , baking, cooling, tasting. May I state at this point I am not overly happy eating Christmas mince tarts, but these were GOOD and just a mouthful!! I am a motor sport freak and attend a meeting most Saturday nights in the summer time. I packed a small container full to take with me to share with the people who I sit with. Let me tell you the tarts were all eaten and not even one left for me!!!!  Coming home that evening I decided a cup of tea would be great with a tart to finish off an awesome night of racing.
   Well imagine my amazement on looking under the tea towel on the table , to find not one tart to be seen, not one!!! I had left maybe 10-12. I thought I had gone crazy, so checked the fridge, no sigh in there, the cake tins,no the oven, not a tart in site. It was all to much for me so off to bed minus the cuppa. I had lost my mind. Maybe I had taken them all with me.
   On Monday my cleaning lady arrived to vacuum and wash floors, I had broken my shoulder and could do some things but floors were out for the time being.  She moved the chair I choose to sit in, and said in a loud voice, you have spilled your Christmas tarts down the side of your chair by the wall. We had a conversation about me not even liking them very much , how they went missing etc, then reality, I HAD MRS RAT living in my house. There were the mince tarts and some cat food behind the chair all ready to feed her family. We could see the teeth marks on some where she had had a nibble.Mrs rat must have moved fast, moving 1dozen mince tarts off the table,down to the floor, across the floor 20paces,and behind the chair. On with the rubber gloves and into the rubbish . We laughed and laughed and I was relieved Iwas no longer insane, although some will dispute that statement. Friends came to my rescue to find Mrs rat and she was disposed of, another friend bought a remote rat for me to be reminded of the episode,like I needed reminding. My friends are on their way to India to help at Project Y for 3weeks .My friends purchased big books from Sunshine books to take to read and do activities with the children, one of the books is RATTY TATTY and no one will be surprised to hear that  battery controlled Mrs Rat is on her way to India to entertain a group of willing learners.

CHRISTMAS MINCE TARTS.FOR 3-4 CUPS..           
rind of 1 lemon            rind of 1 orange
1/2 cup sugar              1/2 cup brown sugar
2 large granny smith apples or the equivalent in any apple
juice of the lemon         2cups sultanas
2cups mixed fruit         1sp each cinnamon,mixed spice, grated nutmeg
1tsp salt                       1/2 tea ground cloves
1/4 cup brandy, whisky, rum sherry or port  I use 1/2 cup to really soak the fruit.
METHOD.

 I use shop bought peel and use 1/4/cup of mixed peel. Grate the apples and place in a large bowl with the peel,whit sugar,juice, spices,sultanas, mixed fruit,and the alcohol of choice. Store in fridge for flavors to blend for up to 3weeks, the mixture can be frozen for a longer period.
